It was just a couple of weeks ago when I first heard the concept of a "Warm Salad." Warm food has always felt more satisfying to me, so the idea of getting my veggies in with a warm salad was instantly exciting!
With the winter cold settling in, cold salads lose their appeal—but a warm, hearty salad? That’s a game-changer. Plus, I came across a healthy and delicious dressing recipe that’s perfect for roasted veggies, and I knew I had to try it.
The Magic of Warm Salads
A warm salad is simply lightly sautéed or roasted vegetables brought together in a bowl of goodness. You can make it your own by adding:
- A wholesome grain (like quinoa, farro, or rice)
- Your favorite protein (chicken, tofu, salmon, etc.)
- A sprinkle of cheese (goat cheese, feta, or parmesan)
We’ve used this concept with multiple combinations of roasted veggies, and the results have been incredible. As a bonus, we even tried this dressing as a glaze over green beans and salmon—and it was just as amazing!
The Dressing That Ties It All Together
This roasted garlic honey mustard dressing will take your warm salad (or any dish) to the next level:
Ingredients:
- 1 head of roasted garlic
- 2 ½ Tbsp olive oil
- 1 Tbsp white wine vinegar
- 1 Tbsp honey
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp water
Instructions:
- Roast a head of garlic with your veggies or on its own.
- Blend all the ingredients together in a food processor or with an immersion blender until smooth.
