If you are a parent, you may struggle getting enough vegetables in your kids.
Although, I've seen families who's kids eat lots of veggies - so I think it's all about creating the habits within them. And sometimes that means getting creative.
With that said, I am always looking for new meals that foster healthy eating - which means lots of veggies.
This recipe is a barebones receipe.
That means, you can add or change out ingredients with other seasonal produce or meat.
For example, this past week I included onion and tatsoi in our broccoli and chicken stir fry.
Tatsoi is a loose leaf asian green and looks similar to spinach and tastes similar to bok choi.
